2022 is here, and I know getting healthier is definitely one of my resolutions! I’ve rounded up some Healthy Recipes for the New Year to help us all get ready to be our best selves in 2022!
Healthy Breakfast Recipes
BERTS Frittata | This Bacon, Egg, Ricotta, Tomato, and Spinach Frittata is a healthy, low carb option for breakfast. You can make this ahead of time, too, and store individual pieces in the fridge to heat on a busy weekday morning.

Low Carb Breakfast Casserole | This Low Carb Breakfast Casserole is a delicious, hearty breakfast that will last throughout the week. Our kids love this one, too!

Healthy Lunch Recipes
La Duni Salad | This salad is based on one of my all-time favorite salads from a restaurant we used to go to called La Duni when we lived in Dallas. It’s so yummy with a combo of avocado, hearts of palm, grilled chicken, and a drizzle of balsamic! You can make the ingredients ahead of time, store separately, then combine when you’re ready to eat!

Slow Cooker Butternut Squash Soup | This easy slow cooker soup is a big hit in our family! It’s a lovely dump-and-go recipes, too. We garnish ours with pepita seeds and cooked bacon for some yummy added flavor.

Loaded Mexican Veggie Quinoa with Cilantro Lime Vinaigrette | This recipes may be a mouthful to say, but it’s a delightful little mouthful to eat! I love to make this on a Sunday afternoon and have it ready to heat up during the week. I top my quinoa with diced avocado and Feta cheese. It makes for a delicious, healthy lunch that keeps me full until dinner time!

Mediterranean Chickpea Salad | This salad is a beautiful blend of Mediterranean flavors that come together to make a hearty lunch. This is another make ahead lunch that will last you throughout the week.

Healthy Dinner Recipes
Mediterranean Turkey Burgers | These burgers have been in our ongoing dinner rotation for years! We love how easy they are to make and, more importantly, how delicious they are. We serve them on lettuce and top them with Feta cheese and store bought Tzatziki sauce.

Winey Lemon Chicken | This easy recipe is a one-pot-wonder that comes together in no time. It’s easy on the calories but full on flavor.

Turkey Stuffed Bell Peppers | These are one of our favorite weeknight dinners. Stuffed peppers have been a dinner staple in my family for years and for good reason!

Tuscan Chicken Cakes | We haven’t had these Tuscan Chicken Cakes in a while, but the are most certainly going back into the rotation soon. They’re a wonderfully-textured chicken patty that pairs perfectly with the homemade sauce and a side salad.

Air Fryer Teriyaki Salmon | This simple, tasty salmon recipe is as easy as they come: just marinate the salmon for a few hours then cook in your air fryer for a fast, healthy dinner.

Mexican Pork | This is one of my oldest go-to recipes. You need very few ingredients plus this dinner is light on calories.

Roasted Chicken with Goat Cheese and Lemon | This is another one-pot-wonder that you just bake away in the oven! It’s perfect for an easy weeknight dinner.

Spaghetti Squash Beef Parmesan | This low carb Beef Parmesan is a delicious, low-carb alternative to Chicken Parmesan. The spaghetti squash makes for a great substitute to pasta.

Cheesy Cauliflower Rice | This is another low-carb side dish that you can make instead of rice.

Easy Vegetable Sides | I love the flavors of a simple roasted vegetable to pair with most any meal.

Mexican Veggie Medley | This Mexican Vegetable side dish has been a staple in our dinner rotation for years. The flavors pair wonderfully for a delicious Taco Tuesday.

Kale and Romaine Caesar Salad | You’ll never think of kale the same way once you’ve tried this Caesar salad!

Grilled Corn and Asparagus Salad | This easy salad is delicious and refreshing alongside grilled meat.
