Rule #246: A good salad should be both delicious and filling.
You ever go to a restaurant, order a salad, chow down, and then about an hour later feel so hungry that you could eat about 12 Big Macs? No? Just me? Well, this, my friends is no such salad. This La Duni Salad (as I’ve so wittily named it) is a delicious, filling salad that will leave you full from lunch to dinnertime.
This recipe is adapted from one of my absolutely favorite restaurants in Dallas, La Duni. It’s a great spot for breakfast, brunch, or lunch with all kinds of goodies. This salad was always my go-to because of how hearty and delicious it is while still being light (gotta save room for the champagne, right?).
All you need to make this delicious La Duni Salad is: avocado, hearts of palm, grilled chicken, cherry tomatoes, and salad greens.
Next, sprinkle on a little salt and pepper.
We love Trader Joe’s Balsamic Glaze in our house. It’s a great way to add some flavor to all kinds of dishes with very few calories!
Now, drizzle a little of the balsamic glaze and some olive oil over your delicious La Duni Salad, and you’re off to the races. (What does that saying even mean, anyway?) This delicious lunch is so light and full of hearty protein. One salad comes in at 335 calories, 6g net carbs, and 15g of protein.
So go ahead, grab these goodies at the store and whip up your new favorite salad!
