Eating Lately: Low Carb / Keto (ish) Eating
Rule #168: Low carb eating can be yummy and easy!
Confessions of a Carb Addict: I can easily put down an entire bag of Gardetto’s without skipping a beat. I think I may have actually set a world record for speed at some point, but, that’s an award I probably shouldn’t claim publicly. Now that we’re all non-preggo in the house and things are *slightly* getting back to ‘normal’, we’re starting to focus on eating healthier. Pasta every night shouldn’t really be allowed, even during pregnancy, but again… I’m a self-confessed Carb Addict so it’s time to go into remission.
I thought I’d share some of the things we’ve been eating lately that are low carb + Keto (ish). It’s pretty difficult to make meals, eat snacks, prepare lunches, etc. that are all low carb when you’re busy. Carbs are so easy to grab and go, so we’ve had to really do our research and find things that work for our diets that are simple to prepare + eat.
One of our go-to weeknight meals. Super easy to make + low carb! We have ours with Cauliflower Mash.
This was a major low carb breakfast hit for our house! You can’t go wrong with bacon + eggs + ricotta + tomatoes + spinach. It lasts for a few days in the fridge, too, so you can make it on the weekend for meal prep.
A dump-and-go slow cooker meal that’s yummy and low carb.
Keto Bacon Ranch Chicken (click for printable recipe)
I was super skeptical about this one… I mean… it looks like slop, right? Well, it tastes fan-freaking-tastic. We had this with some Sliced Roasted Sweet Potatoes (see below) and roasted broccoli. It’s super high fat, so it’s very much a Keto meal and not necessarily one I’d eat on a regular basis. But, it is delish!
One of our favorite fall meals is Pioneer Woman’s Red Wine Pot Roast from her Dinnertime Cookbook. It’s got red wine + orange marmalade! Can’t go wrong with that. I love being able to sear + sauté in my slow cooker, too! Makes life so much easier to not have to transfer things from one pot to another (and makes for less dishes).
It’s become a tradition for us to make chili on Halloween. I cook it earlier in the day (before the chaos), then throw it in a slow cooker on low heat to stay warm. It’s the perfect rib-sticking comfort food on a fun and busy day.

Roasted Chicken with Goat Cheese + Lemon
Some of our favorite low carb sides:
Sliced Roasted Sweet Potatoes
wash + scrub your potatoes
slice your potatoes into 1/2″ rounds
drizzle with EVOO (extra-virgin olive oil), Kosher salt, black pepper, and a little garlic powder
lay slices flat onto a 13×9 Pyrex dish or a large baking sheet
roast at 400 until crisp (about 20 minutes)
Roasted Beets with Dijon Vinaigrette + Goat Cheese
Broccoli Sautéed in Wine + Garlic
Here are some of our favorite products/snacks that are low carb + low sugar:
We love these as our sweet tooth satisfiers. They have zero sugar and still taste so yummy! We’ve had every flavor and have loved them all.
Duke’s Smoked ‘Shorty’ Sausages *lowest in sugar & we can get them at H-E-B* – 6g of protein + 1g of carbs
Jack Link’s Beef Jerky – 15g of protein + 6g of carbs
Charcuterie Meats – these usually come in all different packages, flavors, and prices. We go for this trio!
Babybell White Cheddar + Gouda Cheese Wheels
These are soooooo yummy! They’re not always easy to find, but they’re worth the search.
Nuts
Parmesan + Cheddar Whisps – 13g of protein + 1g carbs
Probably my favorite snack! They pair very well with wine, too.
Premier Protein Protein Shakes – 30g of protein + 5g of carbs
I’ve started drinking these for breakfast because it’s absolute chaos around here. Trying to make eggs every morning is just a non-option. I grab one of these, and I’m full until lunchtime.
