Happy Sunday, y’all! I’m finally getting some get-up in my step-up these days now that I’m further into the second trimester. To celebrate, I’m planning to make some healthy, yummy, and still easy meals this week! We’ll see how many actually happen, but hey, it’s fun to plan!

I tried a couple of new recipes last week, and both were MAJOR hits at our house! They were both very quick and easy to make, too:

Pimento Cheese Pasta Salad

Slow Cooker Salsa Verde Chicken + Dumplings

Monday: Spring Quiche with Ham and Asparagus + a simple salad

Tuesday: Chicken with Cream of Mushroom + Worcestershire (super easy and yummy) + steamed rice + roasted green beans with Parmesan

Wednesday: Shrimp Creole + steamed rice + Lemon & Parmesan Broccoli

Thursday: Jon Boy wants to grill, so – my Daddy’s Marinated Flank Steak (flank steak marinated in 3 tbs. sesame oil, 1/4 cup low sodium soy sauce, 3 chopped green onions) + Corrales Casserole + grilled veggies (zucchini, asparagus, yellow squash, bell pepper)

Friday: Kitchen’s Closed | We’ll probably be at Willie’s Grill & Icehouse


I’m also going to try (at some point) to make some Pasta e Fagioli to have in the fridge/freezer for easy lunches and dinners. It freezes like a charm, so all you’ve got to do is heat it and cook some pasta!

  1. Great post! I’m having difficulty meal planning. Every week I look on Pinterest for inspiration and every week I end up walking down each aisle of the grocery store and randomly selecting what looks good. Aye yi yi. One day I will stay within budget and properly plan.
