Weekly Meal Plan

I love making our weekly meal plan! It makes me feel like I’ve accomplished something before I’ve even done anything at all. Kind of like when you pin a million things you’re going to do on Pinterest and feel completely awesome and organized. The plan doesn’t always happen, but it sure does feel good to have an idea of what’s going on before the week starts. I went ahead and planned for two weeks in advance again.

Monday: Green Chile Stew | My aunt is hands-down the queen of Green Chile Stew, a New Mexico staple. She gave me the recipe years ago, and I’ve never been able to make it quite as good as hers. I hope I’m improving each time I make it. Practice makes perfect, right? {recipe coming soon}

Tuesday: Mozzarella Stuffed Chicken Meatballs + Simple Salad

Wednesday: We’re headin’ out on the town! Kitchen’s closed, buddy.

Thursday: Beef and Potato Curry + Steamed Basmati Rice + Warm Naan

Friday, Saturday, Sunday: It’s going to be a busy weekend, but I’m hoping we’ll grill one night. Here are a few of our favorite grilling delights: Grilled Stuffed Jalapeños | The Office Burger | Citrus Balsamic Marinade (for grilled chicken or pork) | Marinated White Beans | Mexican Veggie Medley | Pasta Salad | Avocado and Tomato Salad | Corrales Casserole

Monday: Thug Kitchen‘s Wedding Soup with White Bean Balls and Kale (Here is the online recipe, and it’s also in their awesome cookbook a sweet friend gave me – SUCH a great cookbook if you’re trying to eat healthier but still want flavor!)

Tuesday: Potato and Lamb Moussaka + Simple Salad

Wednesday: Easy Pork Chops in the Crock Pot + Roasted Veggie

Thursday: Leftovers, baby cakes!

Friday: Good Friday! Haven’t planned ahead, but I’m sure we’ll go out. Here are some of our favorite Houston restaurants!
