Rule #95: Lunchie Lou needs some love.
Lunch, I feel, is the most overlooked of all the meals. Dinner gets its mojo from being the biggest meal of the day. Breakfast is the most important meal of the day. Brunch, I’d argue, is the most fun meal in a day. So, what happened to poor ole Lunchie Lou? I’m trying to give a little love to the midday meal with this post all about some Easy Healthy Lunch Ideas. I tried to compile a list of lunches that are quick to throw together, taste delicious, and are light on the ole waistline. I’m going to make this post short and simple with just a quick run down of what’s on ze plate. Feel free to comment with questions!
Trader Joe’s Cauliflower Thins | Butter Lettuce | Dijon | Mayo | Boar’s Head Honey Maple Turkey | Crispy Bacon | Leftover Peach & Serrano Salad
These are a great low carb alternative to bread if you can find it at Trader Joe’s!
Lettuce Wrap (we use this lettuce) | Dijon | Mayonnaise with Olive Oil | Boar’s Head Honey Maple Turkey | Crispy Bacon (we cook ours in the Air Fryer)
Same lettuce wraps as above but with tons of veggies and fruit.
Lettuce wraps again but add in some Swiss cheese that oddly looks like Califlornia, Idaho, and possibly North Dakota.
Tuna Salad Lettuce Wraps (recipe for Tuna Salad below)
Tuna Salad: 1 can Solid White Tuna in Water | 1 tbs. Mayo with Olive Oil | 1 tbs. Dijon mustard | 1 1/2 tbs. sweet relish | Pinch each of salt and pepper
Mediterranean Turkey Burger (pulled straight from the freezer and microwaved at half power for 3 minutes) | Tzatziki | Veggies
This Trader Joe’s Everything but the Bagel Greek Yogurt Dip is delicious! It’s a perfect friend to any veggie!
Trader Joe’s Avocado Tzatziki is another great veggie dip!
An easy go-to for us (because our local grocery store always has it) is Opadipity’s Greek Yogurt Dip. We like the ranch, but they have other flavors, too. Brooke (our 2 year old) would eat this by the spoonful if I let her.
