Our Weekly Meal Plan has been a whole lot of “Hey… what can you pick up on the way home” instead of the usual planned situation. Everybody has those weeks months sometimes though, right? It’s just part of the deal. I’m trying to get back into the Meal Planning Game, so I’m going all out. I’ve put together a meal plan for the next two weeks hoping that I can knock it all out successfully. We’ll see what happens…

With St. Patty’s Day just around the corner, I thought I’d cook up (and hopefully share with y’all later) a few traditional Irish recipes. They’re very simple to make and hearty as can be. I married an Irish fella, so I figure I should give his roots a little shout out in the kitchen from time to time. All the Irish laddies are **starred** for you.

Monday: Chicken Sausage Pasta + a Roasted Veggie

Tuesday: **Corned Beef, Cabbage, and Carrots**

Wednesday: Leftovers, Baby

Thursday: **Shepherd’s Pie**

Friday: Take Out + **Irish Whiskey Cake** – not a traditional Irish dish, but most assuredly a traditional Irish beverage used to make a delicious, moist cake.

Saturday + Sunday: No plans

Monday: Taco Casserole

Tuesday: No-Noodle Sweet Potato Sage Lasagna + Kale Salad

Wednesday: Leftovers Again, Baby

Thursday: **Slow Cooker Irish Beef Stew** (recipe coming soon)
