Clinton Kelly’s Grilled Peach Bourbon Smash

This is not only puuuuuurty to look at, but it’s delicioso, too! Clinton Kelly is not only a crafter, fashion icon, and hilarious host of my fave show, The Chew. He’s also quite the cocktail connoisseur (I definitely had to look up how to spell that word).

Grilling the peaches was one extra little step, but in the summer, you’re most likely grilling anyways. Just throw a couple peaches on for about 5 minutes, muddle them with sugar and mint, and you’re on your way to a fantastic, refreshing little beverage.

Grilled Peach Bourbon Smash

1 peach (halved and pitted)
1 sugar cube
5 mint leaves
1 ounce lemon juice
2 ounces bourbon
ice (to serve)
Preheat grill or grill pan to medium-high heat. Place peach halves on the grill, flat-side-down. Grill until well charred and soft, about 5 minutes. Remove halves to a cutting board. Cut peach into 8 slices.
In a cocktail shaker, add sugar cube and crush with a muddler. Add one grilled peach slice, mint leaves and lemon juice. Muddle the fruit well. Add some ice and bourbon. Close and shake vigorously. Strain into a rocks glass filled with ice. Garnish with a grilled peach slice.
