Rule #621: Juicy equals delicious.
This Air Fryer Chicken Dijon is the stuff dinner dreams are made of! All you need to do is whip up your marinade, throw the chicken in it, let it hang in the fridge for a bit, then cook in your air fryer. No air fryer? No problem! Toss it in the oven to bake instead.
There’s something so magical about the air fryer, isn’t there? Less cook time. Less mess. And extremely juicy chicken breast. Shoot, that almost rhymed, didn’t it?
Here are the Stars of our Marinade Show.
Mix all of the marinade ingredients together in a medium bowl.
Place your chicken breasts (I usually do 3 at a time in the air fryer) in a shallow dish. Spread the marinade all over, turning to coat. Cover and marinate in the fridge for 3 hours at least (up to 10).
When you’re ready to cook, preheat your air fryer to 400. Then, spray the basket with cooking spray. Place the chicken into the basket and cook at 400 for 10 minutes.
After 10 minutes, flip the chicken and cook an additional 10 minutes. Then, let sit in the air fryer and rest for 5.
Just look how deliciously juicy this little chicky is!
Our kids even gobbled this up! We had the leftovers as part of an easy, healthy lunch the next day, too!
You’ve gotta love a low carb, delicious dinner that’s simple to make!
