This Slow Cooker Beef and Vegetable Soup is the perfect easy dinner recipe that's comforting, delicious, and healthy. Each serving comes in at only 200 calories!
1(14.5-oz.) can petite diced tomatoes (with juice)
1tbs.tomato paste
1tsp.Italian seasoning
½tsp.garlic powder
2tsp.Kosher salt
½tsp.freshly ground black pepper
4cups(1 qt.) beef stock
Cooked rice or egg noodlesfor serving
Instructions
Cook ground sirloin in a skillet until browned, stirring occasionally (this can be done up to 3 days ahead of time).
Place all remaining ingredients in the slow cooker, then stir in cooked beef. Cover and cook on high for 4½ hours or low for 9 hours. Serve over cooked rice or egg noodles.
