In a large bowl or a standing mixer fitted with the paddle attachment, combine the goat cheese, spices, lime juice, olive oil, and heavy cream. Scoop mixture into a container with a lid and refrigerate for at least 1 hour or up to 1 day ahead of time.
When you’re ready to cook the goat cheese balls, roll the goat cheese mixture into bite-sized balls. Place the whisked eggs and Panko breadcrumbs into two separate, shallow bowls. One at a time, roll the goat cheese balls first into the egg and then the Panko.
Spray your air fryer basket with cooking spray until well-coated. Place the goat cheese balls in the basket, leaving about 1” of space between each ball.
Air Fry the goat cheese balls at 400 for 4 minutes, then let them rest in the basket (take the basket out of the air fryer) for 2 minutes before serving.
