This easy, healthy appetizer is a quick recipe that's perfect for feeding a crowd! Just marinated your cucumbers in a simple marinade, whip up some feta with a few ingredients, and let them rest in the fridge until party time! This dip is light and full of fresh flavors. We serve our Whipped Feta and Marinated Cucumbers with bagel chips or pita chips.
1seedlessEnglish cucumber, chopped into bite-sized pieces or smaller
2tbs.extra-virgin olive oil
1tbs.fresh oreganochopped
Juice of ½ a lemon(about 2 tbs.)
Pinchof Kosher salt
1/8tsp.freshly ground black pepper
Instructions
To Make the Whipped Feta
In a standing mixer using a paddle attachment, whip together the feta cheese and cream cheese until smooth. Add in the heavy cream, olive oil, and lemon juice. Whip until everything is combined. Remove and store in an airtight container in the fridge for at least 1 hour and up to 1 day.
Drizzle the feta with a little extra olive oil just before serving.
To Make the Marinated Cucumbers
Place all ingredients in a large glass Tupperware that has a lid. Cover with the lid and shake until all ingredients are combined. Store in the fridge for at least 1 hour and up to 2 days.
Serve with bagel or pita chips.
