Cheeseburger Quiche is a savory, delicious spin on a traditional quiche mixed with the flavors of a good old fashioned cheeseburger. By using a store bought pie crust, you save yourself some precious time, too!
2cupsmild cheddar cheeseshredded (divided 1 cup + 1 cup)

Instructions
Preheat the oven to 350.
Place pie shell in a quiche or pie dish and bake at 350 for 10 minutes. Set aside and allow to cool slightly.
Meanwhile, in a large skillet or Dutch oven over medium heat, heat 1 tbs. olive oil until shimmering. Add the onion and cook until softened (about 5 minutes). Add the ground beef, stirring to combine, and cook until meat is browned (about 5 minutes). Add the garlic, stirring often, until garlic is fragrant (about 1 minute). Sprinkle in the oregano, salt, and pepper, stirring to combine. Once beef has cooked, remove from heat and allow to cool slightly.
In a large bowl, whisk together eggs, milk, mustard, ketchup, sour cream, and 1 cup of the cheddar cheese. Add in the beef mixture and stir to combine. Place the beef mixture into the pie shell, then top with the remaining cup of cheddar cheese and the Parmesan.
Bake at 350 for 40-45 minutes, until the cheese is golden and bubbly. Allow to rest 10 minutes before serving. Garnish as desired.

To make ahead of time: Brown the onions, meat, and garlic as above. Mix in spices then store in an airtight container until ready to assemble (up to 3 days ahead). Similarly, mix together egg mixture and store separately in an airtight container (up to 3 days ahead).
