Rule #202: When Cinco de Mayo falls on Taco Tuesday, you know it’s going to be a great fiesta!

With Cinco de Mayo just around the corner, I thought I’d round up some great recipe ideas to get your culinary juices flowing! So, bust out the margaritas because we are ready to celebrate with some of the yummiest food around!

Best Margaritas | You can’t celebrate Cinco de Mayo without a proper margarita, mis amigos. This is Jon Boy’s tried-and-true recipe. We call them Jon-a-Ritas around these parts, but feel free to give them your own tequila-loving name.

Mexican Street Corn | One of my favorite Mexican dishes has to be this elote (corn on the cob) dish! Mexican Street Corn is all about the flavors of Mexico: sweet corn on the cob, zippy cilantro, and salty Cotija cheese with a splash of lime make this such a fresh, yummy side for your Cinco de Mayo fiesta!

Easy Peasy Mexican Rice | This was a staple my Daddy-O made for us when we were growing up. It takes no time at all, and is a great side for your Cinco de Mayo feast!

Creamy Green Chile Enchiladas | I think the star of the show for our Cinco de Mayo will be these amazing enchiladas my Daddy-O came up with. Every time we have them, I have a great food memory of him doodling around the kitchen with his little giggle (hayuck – just like Goofy).

Red Chile Enchiladas | If you’re more a fan of red chile versus green, these Red Chile Enchiladas are the menu choice for you! I traditionally make these the day after Thanksgiving with leftover turkey (family tradition from my Aunt and Uncle), but you can use shredded chicken instead.
